Chances are you'd never heard of Nikumaki. But let me tell you, this stuff is delicious and will make me eat my veggies anytime.

These are a savory appetizer of vegetables wrapped in thin pork and glazed in teriyaki sauce. I've made these a few times and even my family members who don't really like Asian cooking enjoyed these.

Ironic how I'm American and white, yet I keep cooking Japanese food and posting recipes here. Then again, I love the Japanese culture and respect it. :T Anyways, ON WITH THE FOOD!

Ingredients

Thin sliced pork (Bacon or prosciutto will work if you can't get thin sliced pork)

1 1/2 inch Vegetable strips (You can use bell peppers, asparagus, carrots, onions, green beans, etc.)

Teriyaki sauce

Toothpicks to hold the rolls together.

This will be easy and simple, with promised great results!

1) Boil the vegetables for 2-3 minutes, then remove and cool.

2) Pick your vegetables you want to put into your roll and roll them in a strip of pork. Use a tooth pick to hold it together. Repeat until you have the desired rolls or run out of vegetables or pork. Place leftovers in a container and hold for later use, you can stir fry those puppies with dinner.

3) In a pan at medium heat, place your rolls and brown them. Once browned, glaze with Teriyaki sauce and cook for a few more minutes. Remove from heat and remove the toothpicks.

4) Cut the nikumaki in half to make them bite sized and serve.

And there ya go! Next, I'm planning a recipe for a meal popular in Japan, especially in winter~
