![]() From Maki rolls to Meguro to onigiri, if you are eating sushi, chances are there is rice. But if you notice, the rice has a distinct flavor of its own that clearly comes from some kind of seasoning, but what? Welp, I happen to love sushi rice and through the power of research, I looked up recipes, I've learned what the seasonings are and how to apply them. Note: I will not be doing a recipe on sushi. If I had any love for fish, I would, and I'd probably love eating sushi, but quite frankly, last time I ate sushi, I gagged and nearly vomited. However, I will leave some suggestions of sushi options for you to pair your rice and make at least meguro sushi or stuffed onigiri. Ingredients 4 cups steamed short-grain rice, still fresh (Japanese rice is the best, but they don't export their rice. However, California has excellent hybrids that work just as well.) 1 table spoon rice wine vinegar 1 table spoon sugar 1 tea spoon salt 1) Combine the vinegar, sugar, and salt and stir until dissolved. 2) Transfer rice to a flat dish like this ![]() 3) Pour the vinegar mixture over the rice and mix it up using slashing motions. DO NOT STIR. Stirring can cause the rice grains to break and no one wants that for sushi. 4) Take a fan and fan the rice to cool it. If need be, a paper plate will do the trick just fine. And that's it, there's your sushi rice. Popular toppings are Fatty tuna Yellow tail Unagi (eel) Octopus Ebi (Shrimp) Sea urchin Salmon Tamago (Egg) Crab Salmon Roe (Eggs) To make meguro, you take a small hand full of sushi rice and shape it into a block, but don't pack it together. Then place the topping of your choice and boom! Meguro sushi. And this is optional, but a bit of wasabi on the rice before you put the fish on it supposedly adds another layer of flavor. THANKS FOR THIS. I made some onigiri a few weeks ago but they didn't QUITE turn out. They were really hard to get to stick together I just need to pick up some vinegar and I'll make these soon. I like filling mine with tuna. <3 |
