Karaage (Japanese Chicken Nuggets); Screw age appropriateness, let's make nuggets and cry over lost childhood

Holy moley Batman, two recipes in one day?!

That right! And right now, it's Chicken's time to shine! I'm gonna share a great recipe for Chicken Karaage, which are basically Japan's version of Chicken Nuggets, but that are SUPERIOR IN EVERY WAY, LIKE HOLY CRUD. If I could, I'd solely live off of Karaage. But I can't and that makes me sad.

But hey, it's still good and relatively cheap to make. Simple too, and goes great with the earlier teriyaki sauce!


Ingredients

Boneless chicken (Chicken thighs are the best but if you wanna use chicken breast, that works too)

Ginger

Soy sauce

Sugar

Garlic

Mirin (Sweet rice wine for cooking)

Sake (The boozey rice wine)

Paprika

Vegetable Oil

Cornstarch or potato starch


1) Combine 1 cup Soy sauce with 2 tablespoons sugar, 2 teaspoons grated ginger, two minced garlic cloves, a teaspoon of paprika, a tablespoon of Mirin, and a table spoon of Sake. Don't have sake? Then add another table spoon of Mirin. Don't have either? Relax, I've tested it before, and it'll come out fine, just not as tasty.

2) Stir that mixture up until the sugar has dissolved. Transfer to a bag and set aside.

3) Cut your chicken into bite-sized chunks and put those chunks in the bag. Let it marinade for at LEAST 30 minutes, but I've found up to one to three hours produce the best results. Hell, even over night works so long as it's in the fridge.

4) Bring out your frying pot and pour in enough oil to fry your chicken. Heat that up before you are ready to cook.

5) Pull out your chicken and in a bowl, put in enough corn or potato starch to cover all the chicken.

6) Roll your chicken pieces in that starch and place them into the frying oil. Dispose of your marinade, that stuff's no good anymore.

7) Cook up to five pieces at a time and cook them until golden brown. Pull them out and place them somewhere to drain off excess oil. Restrain all urges to eat the chicken as it cools. Trust me, I have suffered the consequences enough times.

8) Repeat until all your chicken is cooked.

And you're done! Serve with the sauce of your choice, but keep that ketchup away! Seriously man, all that effort to flavor the chicken and you're gonna dip it in a sauce that'll over-power it? What's the matter with you? I'd rather you eat this stuff plain than with processed tomato puree.

My sauces of choice are soy sauce, ponzu (a citrus infused soy sauce), and teriyaki, but I typically eat these nuggets of wonder with soy sauce mixed with a bit of lemon juice. It's heaven, man.

Great sides include fries, rice, stir-fried vegetables, and anime. Or just nostalgia of younger days.
